Four Pillars age their Rare Dry Gin in a solera of 42 sherry and Australian Apera casks, some 15 to 35 years old, deepening the colour and sweetness with every release since 2018. Residual sherry richness is underpinned by pine-oil juniper, with coriander lending lemony citrus, green cardamom sweet perfume, cassia binding the spice, plus star anise, lavender, angelica, pepperberry, lemon myrtle and orange rounding out fruit-and-nut depth. Named Master at the 2018 Global Gin Masters. The cassia here ties every other spice together — a quiet workhorse botanical worth knowing when you build your own bill.
