Made in Puerto de Santa María, Cádiz, this tri-distilled Rives takes twice-distilled grain spirit and runs it a third time through John Dore copper stills with eleven botanicals: juniper, coriander, angelica seed and root, cassia, liquorice, grains of paradise, bitter almond, Italian orris root, lemon and bitter orange peel, macerated 24 hours beforehand. The Santa María ship on the bottle nods to Columbus. Grains of paradise brings a warm, peppery spice — a hero botanical to make your own gin sing.
