Chase's William's Gin starts from farm-made apple vodka distilled from the estate's own cider. Eleven botanicals are used — juniper, coriander seeds, angelica seeds, angelica root, liquorice root, orris root, orange and lemon peel, hops, dried elderflower and fresh Bramley apples — vapour-distilled in a copper pot still at Chase Distillery. The hops nod to the building's heritage as a hop kiln barn — an unexpected botanical to play with in your own bill.
