Bloody Pinot Noir Gin 2025

Now in its third vintage, this Four Pillars limited release follows the famous Bloody Shiraz method but treats the delicate Pinot Noir grape just right — whole Yarra Valley bunches soaked around seven weeks in high-proof Rare Dry Gin for texture, ripe tannins and an almost amaro-like edge. Lighter and paler than its Shiraz sibling, it dances across the palate with rhubarb, rose petal and strawberry over juniper, pepperberry, coriander, green cardamom, cassia, star anise, lavender, angelica, lemon myrtle and orange. The rose-petal lift here shows how a floral note can soften a spirit — one to consider when making your own gin.
