Three Peach Gin
fourpillarsgin.com Reviewed by Gin School; distillery has not claimed entry
A layered, lower-ABV Four Pillars limited edition built for long lunches, balancing three kinds of peach — distilled quandong, plus white and yellow peach macerate steeped for four weeks. Zesty green apple and finger lime lift roasted almond, dried fig leaf, bourbon vanilla, juniper, coriander, lavender, roasted wattleseed, orris and strawberry gum into something delicate and stone-fruit bright. Quandong, the native peach, carries real tang and colour — a hero botanical to make your own gin sing.
