Launched in 2008, Hayman's London Dry is a classic of the style, distilled with ten botanicals steeped in the pot still for 24 hours before distillation. The bill takes in juniper, coriander seed, nutmeg, cinnamon, angelica root, orris root, cassia bark, liquorice, Spanish orange and lemon peel.
That long 24-hour steep before firing the still draws deeper aromatics from the coriander seed — a simple trick worth borrowing when you make your own gin.
