The work of Spanish sommelier Manuel Barrientos, Gin Sea takes English grain spirit and redistils it in Galicia with eleven botanicals: juniper, cardamom, coriander, thyme, chamomile, liquorice, peppermint, cinnamon quillings, sweet and bitter orange, and lemon peel. Fresh, herbal and aromatic with a Mediterranean lean. Peppermint brings a cool, lifting freshness — a hero botanical to reach for when you build your own bill.
