A clever piece of upcycling: Foxhole is built on a grape spirit distilled from the marc and skins left after pressing grapes for English wine at Sussex's Bolney Wine Estate — once a waste product. Nine botanicals follow: juniper, coriander, angelica root, orris root, liquorice root, bitter orange, fresh lemon and grapefruit zests, and angelica seed. Named after the lane leading to the estate, each batch carries that year's harvest character. The bright grapefruit zest gives it a zingy lift — a hero botanical to make your own gin sing.
