Bimber London Dry Gin
bimber.co.uk Reviewed by Gin School; distillery has not claimed entry
Made in London by Bimber, this London dry infuses ten botanicals in wheat neutral spirit before distillation in Astraeus, a 600-litre copper alembic still. The bill runs juniper, coriander seeds, angelica root, orange peel, lemon peel, cinnamon bark, liquorice root, cassia bark, orris root and nutmeg. The pairing of cinnamon and cassia builds a warm, layered spice worth borrowing for your own bill.
