Launched in 2012 and named for the Biercée Distillery in Belgium, this gin arrives wrapped in a black-and-white diamond casing nodding to a court jester's livery. The bill is broad and playful: juniper, coriander, citrus, fennel, anise, poppy, cocoa, hops, clove, lavender and vanilla. That cocoa adds a dry, roasted depth — a hero botanical to make your own gin sing.
