The Times Gin

Released in 2013 for retailer Master of Malt, The Times Gin pairs a copper pot still with reduced-pressure vacuum distillation. The base spirit carries nine traditional botanicals — juniper, coriander, orris root, liquorice root, angelica, cassia bark, cinnamon, dried lemon and dried orange peel — before a separate citrus distillate of clementine, pomelo and grapefruit is folded in to bolster the zest. That second clementine distillate shows how a focused citrus run can lift a whole bill when you make your own gin.
