A Greek take on the English Old Tom style, made by Finest Roots for The Clumsies bar in Athens as a 2015 limited edition. Its nine botanicals are liquorice, rosemary, angelica root, chamomile, juniper, cardamom, coriander, nutmeg and bitter orange peel, giving a sweetly rounded, herbaceous profile. GinSchool discovery: rosemary's pine-and-camphor aromatics come from cineole and camphor, which sit naturally beside juniper's own terpenes — a herb that reinforces a gin's evergreen backbone.
