The Sabatini family grow their botanicals on their properties around Teccognano in south-eastern Tuscany, and all nine go into this gin: juniper, coriander, iris, fennel, lavender, olive leaves, thyme, verbena and salvia. The botanicals are shipped to London and distilled at Thames Distillers. GinSchool discovery: olive leaves lend a savoury, herbaceous bitterness — a true taste of the Mediterranean to weave into your own gin.
