Pickering's is built on a handwritten recipe dated 17 July 1947, fine-tuned to nine botanicals and distilled with wheat spirit in a 500-litre copper bain-marie still named Gert. The line-up runs juniper, coriander, cardamom, angelica, fennel, anise, lemon, lime and cloves. That whisper of fennel brings a gentle aniseed sweetness — a hero botanical to reach for when you build your own bill.
