Hillmartin's limited Easter release is built like the bake it's named for. Father and son macerate date, sultana and raisin in the base spirit, then run the still with juniper, the traditional hot-cross-bun spices and fresh navel orange, before resting on French oak and a touch of organic panela. The nose is pure toasted-bun nostalgia; the palate opens on cinnamon, clove and dried fruit. Allspice brings rounded, warming depth — a hero spice to reach for when you build your own festive bill.
