Founded by Will Turnage in 2015 to a wartime recipe from his grandfather, Royal Navy Commander Michael Wallrock, Hawthorn's is distilled in a vintage copper pot still on English wheat spirit with ten botanicals: Macedonian juniper, orange and lemon peel from Seville, Bulgarian coriander seed, orris root, angelica root, Indonesian cassia bark and liquorice. Coriander seed is the workhorse to master — its citrusy, peppery warmth ties a whole classic bill together.
