Cotswolds Distillery's Dry Gin is a juniper-led English gin built on a generous botanical load that throws a pearlescent cloud when tonic is added. Juniper, coriander seed and angelica root form the classic foundation, joined by nearby Snowshill lavender and bay leaves. Freshly peeled lime and pink grapefruit zest bring the citrus, with cardamom and black peppercorn for a hint of spice. Hand-peeling hundreds of fruit a week, they prize fresh peel for its higher essential-oil content, a trick worth borrowing when you build your own bill.
