Brooklyn Gin is made by Joe Santos with 11 botanicals, five of them fresh citrus peels — Eureka lemon, Persian lime, Key lime, navel orange and kumquat — distilled at Warwick Valley Winery & Distillery in New York State. A backbone of juniper, coriander and angelica root sits alongside lavender, cocoa nibs and orris root. Those bright, hand-cut citrus peels are the heart of it — a fresh-peel approach worth borrowing when you build your own bill.
