Named for "bleeding the monkey" — 17th-century sailors drilling into the officers' barrel — and distilled by West Cork Distillers. The ten-botanical bill runs juniper, lime leaf, almond, orris root, Irish rosemary, liquorice, coriander, citrus, chamomile and angelica, all housed in an eco-minded recycled bottle. That Irish rosemary adds a savoury, resinous lift — a hero botanical to make your own gin sing.
