A one-off from Beefeater master distiller Desmond Payne, who noticed gin distilled on Mondays carried a special character. The classic nine botanicals — juniper, angelica root and angelica seeds, coriander seeds, Seville orange peel, liquorice, almonds, orris root and lemon peel — steep over a long weekend before distillation. That extended 72-hour steep is a simple trick to remember when you make your own gin.
