Inspired by walks on Hampstead Heath, this London Dry is made by Mercedesz Bondi and Callum Sinclair in a 30-litre copper pot still, with profits shared with the Heath Hands conservation charity. Its 16 botanicals include heath natives dandelion, rose, hawthorn berries, burdock, rowan and sorrel, distilled alongside juniper, pink grapefruit, orange, kaffir lime leaf, grains of paradise and cubeb. GinSchool discovery: burdock root brings an earthy, slightly bitter, nutty depth long used in old herbal cordials — a grounding botanical for an authentically wild gin.
