Made by husband-and-wife distillers Timo and Ashby Marshall at their California distillery, Spirit Works Gin starts with a base spirit from locally grown red winter wheat. Seven botanicals go into the copper pot still: juniper, coriander seeds, angelica root, cardamom, hibiscus, and hand-cut orange and lemon zest hung high in the still's helmet. Hibiscus brings a tart, ruby-floral note — a hero botanical to make your own gin sing.
