Plymouth is made in a 7,000-litre copper pot still that has been in regular use for over 150 years. Its seven botanicals, in order of dominance, are juniper, coriander, lemon peel, sweet orange peel, sweet angelica, orris root and cardamom — and notably no bitter botanicals at all. The soft, earthy orris root is a hero botanical that binds and rounds out your own gin.
