Distilled at the Thames Distillery in London from wheat spirit, Gilpin's redistills eight botanicals: juniper, sage, borage, lemon peel, lime peel, bitter orange, coriander seed and angelica root, using water from the Holy Well Spring at Cartmel in the Lake District. The label's Wild Boar nods to a Westmorland legend and the de Gilpin family. Crisp, herbal and citrus-bright. Borage brings a fresh, cucumber-like lift — one to reach for when you build your own bill.
