Hunter Distillery's Copperwave is an aromatic gin whose 11+ botanicals are distilled separately in flavour groups, then blended like a fine wine. It opens on a nose of juniper, lemon zest and liquorice; the palate is smooth and deep with earthy juniper, coriander, cassia, cinnamon, lemon myrtle, star anise, cardamom, nutmeg and three citrus peels, Asian spice building through the middle. That Australian lemon myrtle is a hero botanical to make your own gin sing.
