From the City of London Distillery, this Old Tom is built on seven botanicals: juniper, coriander seed, angelica root, orris root, lemon peel, orange peel and warming cassia bark. It's a softer, rounder take on the classic London style, with sweet citrus and spice carrying the juniper. Orris root is the quiet fixative here — a hero botanical that binds the others together when you build your own gin.
