An Old Tom style winter gin from Applewood Distillery, made in collaboration with Inglewood Inn. A high dose of juniper balances warming cinnamon, bay leaf, cardamom and clove, with native pepperberry and grape skin added for richness. GinSchool discovery: pepperberry brings a slow-building native heat and a deep purple hue — one to reach for when you build a warming winter bill.
