West Winds' uniquely Australian take on the very British sloe gin. They first built an earthy, warm base of juniper, liquorice, angelica, native anise myrtle and orange peel, then infused it with davidson plum and sloe for three months — the plum bringing sour stone-fruit, the sloe a stewed-fruit richness. A little banksia honey from the Swan Valley lifts and lightly sweetens it. Davidson plum delivers a vivid native tartness — a hero botanical to make your own gin sing.
