Built on Spanish grape spirit from the native Tempranillo grape, Santamanía is flavoured with 14 botanicals including juniper, coriander, liquorice, Spanish lime and lemon, angelica root, Spanish pistachio nuts and raspberries. Macerated, then redistilled in a hybrid copper still and cut with Canary Island volcanic water. GinSchool discovery: pistachio nuts add a soft, buttery nuttiness — an unusual, rounding note to experiment with in your own bill.
