Made to a 19th-century recipe, Bols Barrel Aged Genever pours over a base of 50% malt wine triple-distilled from rye, wheat and corn, then blended with traditional genever botanicals: juniper, hops, cloves, anise, liquorice and ginger. Eighteen months in Limousin oak rounds it into something rich and savoury. Hops lend a bittersweet, beery edge — a left-field botanical to reach for when you build your own bill.
