Windspiel is distilled by Holger Borchers in Selsingen, Germany, on a base of potatoes grown on the family farm in the Volcanic Eifel region. That potato spirit is redistilled with ten gin botanicals, including juniper, lemon, cinnamon, coriander and fragrant lavender, for a smooth, refined profile. That lavender adds a soft floral perfume — a hero botanical to make your own gin sing.
