Tarquin's The SeaDog is a navy-strength gin at 57% made with 12 botanicals, including juniper from Kosovo, cinnamon, liquorice, violet and fresh orange peel. All but the violets are infused overnight in wheat spirit, with the delicate violets added just before distillation. GinSchool discovery: violet is prized for a powdery, sweet floral note but is intensely fragile — adding it late, as here, protects those fleeting aromatics from the heat of the still.
