Seven Hills Gin
sevenhillsgin.com Reviewed by Gin School; distillery has not claimed entry
Made at Torino Distillati in Moncalieri, Piedmont, Seven Hills is low-pressure distilled with seven botanicals: juniper, celery, rosehip, pomegranate, camomile, blood orange and artichoke. The botanicals steep in hydrated spirit for ten to fifteen days, are gently pressed, then vacuum pot-distilled to keep the flavours delicate. Artichoke brings a savoury, bittersweet edge — a daring one to reach for when you build your own bill.
