Named after founder Simon Antonius Rutte, whose 1872 recipe it still follows, Old Simon blends two-fifths malt wine with grain spirit, redistilled with juniper and 13 other botanicals. The list is a closely guarded secret but is known to include coriander, angelica, mace, fresh berries, celery, toasted hazelnuts and roasted walnuts.
