A citrus-forward original from HM Gin (Hillmartin) in Plenty, Victoria. Locally grown lemon and lime star alongside lemon myrtle, juniper (sourced from Hungary), coriander and coconut sugar, then the spirit is aged on medium-toasted French oak spirals for a smooth caramel finish and honey-like hue. Lovely with ginger ale. Oak ageing is the hero move here — soaking spirals adds caramel warmth to your own bill.
