Meaning "the beauty of the seasons", Ki No Bi comes from The Kyoto Distillery, Japan's first dedicated gin distillery, and is unusually based on rice spirit. Eleven botanicals steep overnight before pot-still distillation: juniper, orris root, hinoki, lemon, yellow yuzu, sansho pepper, kinome, gyokuro tea from Uji, ginger, red shiso and bamboo leaves, with the spirit reduced using Fushimi spring water. The yuzu sings with bright Japanese citrus, a luminous hero to lift your own gin.
