Hickson House's Classic Dry is a London-style gin that opens on juniper and coriander seed, quickly contradicted by the salinity of Australian old man saltbush, with angelica root and orris root rounding it out. The palate runs earthy, herbal and briny, finishing dry and viscous with saltbush lingering. That old man saltbush lends a coastal, savoury salinity — a hero botanical to make your own gin sing.
