Healey's Blue Agave Gin from Echuca Distillery is made from 100% blue agave nectar, fermented and double-distilled in-house, then macerated with juniper and botanicals for a third distillation. The result is smooth and complex, with tasting notes of juniper, pink pepper and grapefruit, equally at home in a G&T, Gimlet or Margarita. The agave base is the experiment worth stealing — swap the usual grain or grape spirit for it and your gin inherits a soft, vegetal sweetness all its own.
