Headlands Distilling Co.'s Mt. & Sea Gin draws on the Wollongong escarpment where the hills plunge to the sea. A more traditional style, it infuses European juniper with rare Australian rainforest lime, coastal wattleseed and true cinnamon, plus a host of other rare ingredients. Flavour-forward and built for a Martini, Negroni or G&T. Wattleseed brings a roasted, nutty depth — one to reach for when you build your own bill.
