Greenock Estate's Frederick Shiraz Gin is a Barossa drop with the front palate of a London Dry — juniper and finger lime with orange-candy citrus and a savoury olive edge. Rested two to three months in a French barrique that once held the estate's 100-year-old shiraz, it draws out mulberry, plum and spiced-fruitcake notes. Finger lime gives a burst of native citrus — a hero botanical to make your own gin sing.
