A barrel-aged Tasmanian gin from Old Kempton Distillery, oily and rich, balancing juniper and orange before giving way to the cedar and spice of French oak. The oak lingers long on the finish with black pepper coming in late — a whisky-lover's gin, smooth neat or with soda and lime. GinSchool discovery: the cask does real flavour work here — oak isn't in the still but lends vanilla, cedar and spice as the spirit rests, a trick worth remembering when you mature your own gin.
