By The Dutch Old Genever is triple distilled from a wash of barley malt, corn and rye, with juniper added to the third distillation to make a maltwine. Part of that maltwine is redistilled with botanicals including hops, cloves, anise, liquorice, ginger and citrus, before all components are blended to a recipe dating from 1942. Those savoury hops echo the genever's brewing roots — an unexpected botanical to play with in your own bill.
