Brighton Gin is distilled in the city's first legal distillery by Kathy Caton, on 100% organic British wheat spirit. Its botanicals include juniper, orange and lime peel, locally grown coriander seeds and milk thistle. Each bottle is hand-filled and sealed with a hand-dipped aqua-marine wax stopper matching the town's seafront railings. Milk thistle adds a gentle, earthy bitterness — an unusual hero to reach for when you make your own gin.
