Named for the Wirral Peninsula — the "dark side" of the Mersey to Liverpool day-trippers — Tappers DarkSide is a cold-compounded gin flavoured with seaside botanicals including juniper, red clover flowers and leaves, chickweed and freshly foraged sea beet. It takes a natural amber hue from the infused juniper berries. GinSchool discovery: sea beet, the wild ancestor of beetroot and chard, lends a green, mineral, faintly saline note — an unusual coastal botanical to experiment with in your own gin.
