From Imbue Distillery in the hills of Research, Victoria, Sub-urban Gin turns Melbourne's locally abundant edible weeds into hero botanicals. Distilled with grassy fennel, jammy blackberry and dandelion root, it's super refreshing in a G&T garnished with cucumber, which lifts the gin's unique prickly pear melon notes. Dandelion is a wild card worth foraging for your own bill — earthy, faintly bitter, and full of character.
