Pam's Raspberry Gin Jam from 7K Distillery is a homemade preserve, not a gin — sweet Willamette raspberries from the Clark family's Westerway farm on the Derwent, left over from a batch of Tasmanian Raspberry Gin, then topped with a little extra gin. At 6.5% ABV it's made for boozy brunches and tipsy high teas. The juniper that defines the gin still reads through — a reminder that juniper is the one botanical every gin is built on.
