Hayman's Old Tom Gin

Hayman's Old Tom is a modern recreation of a family recipe from the 1860s, revived in 2007 at the request of bartenders and now found on cocktail menus worldwide. It uses the same ten botanicals as the other Hayman gins but with more botanical intensity and the addition of sugar, in the lightly sweetened Old Tom tradition that once bridged Dutch genever and London Dry. Juniper and liquorice anchor the bill.

Old Tom leans on liquorice and added sugar to round out the spirit — a lesson in how sweetness and intense botanicals can soften a gin when you build your own.
