Cotswolds Distillery takes its Dry Gin, distilled to 83% and reduced to 65%, then matures it for three months in STR casks — first-fill ex-Bourbon and shaved, toasted, recharred red wine barrels. The aged spirit is then infused for weeks with fresh Valencian orange peel and candied ginger, with a touch of honey before bottling. Rich and warming, it's lovely neat. That candied ginger is the cosy hero to explore in your own gin.
