Western Star is distilled as a traditional London Dry in a copper pot still beside the Great Western Railway, using botanicals hand-foraged from the rolling hills and hedgerows between London and Penzance. Raspberries and elderberries sit alongside the juniper for a fruited, English-countryside character, all distilled and hand-bottled by Rich and Terri Hudson. Those wild elderberries add a hedgerow sweetness — a hero to reach for when you build your own foraged bill.
