Warner Edwards craft this gin around rhubarb descended from plants once grown in Queen Victoria's gardens and now raised on Crown Estate land in Lincolnshire. The stems are gently heated in a pot still, pressed for juice, then blended with the distillery's Harrington gin and a little sugar. A Penny Black stamp on each hand-numbered, wax-sealed bottle nods to the Queen. Rhubarb brings a tart, rosy brightness — a hero worth reaching for when you build your own gin.
